Basil Chicken Pasta

I enjoy cooking new and different foods. It seems like every week I'm trying out a new recipe, but sometimes there is a need for something quick and easy to fall back on when you just don't feel like spending extra time in the kitchen. On nights where I don't feel like deciphering a new recipe, like tonight, I turn to recipes like Basil Chicken Pasta...

12 oz. rotini pasta
2 Tbs. butter
1 lb. chicken breasts, cut into 1/2 in. cubes
3 cloves garlic, minced
1/2 tsp. ground black pepper
2 tsp. dried basil
1 cup heavy cream
1/4 cup grated parmesan cheese

In a large pot with boiling salted water, cook pasta until al dente. Drain. Meanwhile, in a large skillet melt the butter. Add the chopped chicken and garlic, saute until lightly brown and juices run clear. Stir in the ground black pepper, dried basil, heavy cream and grated parmesan cheese. Bring to a boil and simmer for 20 minutes. Toss drained pasta with basil sauce and serve immediately.
Serve with crusty bread and a salad for a delicious meal!

So Ben was going to make dinner last night, but we were out of onions so I decided to try out this recipe. It was SO good! Definitely a keeper! Thanks!
